- 6 flour tortillas
- 2 cups Mexican cheese blend
Instructions
- Preheat and cook chicken: Preheat a skillet over medium heat and add 1 tablespoon of oil. Add the diced chicken breast along with the taco seasoning. Cook the chicken for about 4 minutes, stirring occasionally to ensure even cooking and seasoning distribution.
- Add vegetables: Add the diced bell pepper and yellow onion to the skillet with the chicken. Continue cooking for another 5 minutes, or until the vegetables are tender and the chicken is cooked through and slightly browned. Remove the mixture from the skillet and set aside.
- Prepare quesadilla base: Clean the skillet, then add a small amount of butter or oil to lightly coat the pan. Place one flour tortilla in the skillet, heating it until warm.
