  • 3/4 cup chicken stock, divided
  • 3 cloves garlic, minced

Instructions

  1. Make the roux: Place the flour and butter into a small skillet over medium heat and whisk together. Continue whisking until the mixture turns medium to dark brown, which should take about 5 minutes. Set the roux aside off the heat.
  2. Cook the sausage and spices: Heat a Dutch oven or thick-bottomed large skillet over medium heat. Once hot, add the ground pork sausage along with cumin, black pepper, and paprika. Sear the sausage, breaking it up into crumbles as it browns. Allow bits to stick to the pan for more flavor.
  3. Deglaze the pan: Pour in 1/2 cup of chicken stock and scrape the bottom of the pan with a wooden spoon to loosen all browned bits and incorporate them into the mixture.
  4. Add garlic: Stir in the minced garlic and cook for about 1 minute until fragrant.
  5. Combine roux: Add the prepared roux into the sausage mixture and stir to combine thoroughly.
