Mojo Marinade

- 1 teaspoon dried oregano
- 1/2 teaspoon freshly ground black pepper

Chicken
- 3 pounds boneless, skinless chicken thighs
Instructions
- Prepare the Mojo Marinade: In a high-powered blender, combine garlic, shallot, salt, lime zest, cumin, oregano, pepper, orange juice, lime juice, and olive oil. Blend until smooth. Reserve ⅓ cup for dipping sauce.
- Marinate the Chicken: Add chicken to the remaining marinade. Refrigerate for at least 1 hour, up to a day.
- Grill the Chicken: Preheat grill to medium-high heat. Oil grates and grill chicken, turning every 5-7 minutes, until internal temperature reaches 165°F for thighs and 150-155°F for breasts.
- Prepare the Dipping Sauce: Transfer reserved marinade to a skillet. Reduce over medium-high heat for 3-5 minutes until thickened. Drizzle over grilled chicken before serving.
