Ingredients

Units Scale

Cookies

  • 1 1/2 cups (333g) salted butter, softened
  • 1 1/2 cups (369g) brown sugar
  • 1/2 cup (115g) granulated sugar
  • 3 eggs
  • 2 tbsp corn syrup
  • 1 tbsp vanilla extract
  • 3 3/4 cups (570g) all-purpose flour
  • 1 cup (120g) dutch processed cocoa powder
  • 1 tbsp corn starch
  • 2 tsp baking soda
  • 1 tsp salt

Toppings

  • 2/3 cup (159g) heavy cream
  • 2 cups (400g) semi sweet chocolate chips
  • 1/3 cup (66g) rainbow coated chocolate chips

Instructions

  1. Preheat oven: Preheat the oven to 350°F (180°C) to prepare for baking the cookies.
  2. Cream butter and sugars: Using a stand mixer, cream together the softened butter, brown sugar, and granulated sugar until the mixture is light in color and fluffy in texture, creating a smooth base for the dough.
  3. Add wet ingredients: Mix in the eggs, corn syrup, and vanilla extract thoroughly until well combined to add moisture and flavor to the dough.
  4. Incorporate dry ingredients: Add the flour, dutch processed cocoa powder, corn starch, baking soda, and salt to the wet mixture. Mix until a soft chocolate cookie dough forms, ensuring all ingredients are evenly combined.
  5. Portion dough: Divide the dough into 12 equal portions using a 1/2 cup measuring cup or similar tool. Roll each portion into a ball and flatten slightly to resemble a hockey puck, then place 6 cookies per tray lined with parchment paper or silicone mats.
  6. Bake cookies: Bake the cookies at 350°F (180°C) for 15-17 minutes, until the cookies crack and crinkle on top, spread slightly, and the centers no longer appear wet.
  7. Prepare fudge frosting: While the cookies bake, pour the heavy cream into a microwave-safe bowl and heat in the microwave for 1 1/2 minutes until boiling. Remove from microwave and add the semi sweet chocolate chips. Stir gently to cover the chips with the hot cream and let sit for 3 minutes.
  8. Mix frosting: Whisk the chocolate chips and cream together until smooth and glossy. Set aside to cool slightly as the cookies finish baking.
  9. Cool and top cookies: Once baked, allow the cookies to cool on the pan for about 10 minutes. Spoon the fudge frosting onto each cookie while warm and generously sprinkle with rainbow coated chocolate chips while the frosting is still wet.
  10. Serve: Serve the cookies warm for the best fudgy and melty experience. Enjoy your cosmic brownie cookies fresh.

Notes

  • Cookies keep well stored in the refrigerator and can be made a few days in advance for convenience.
  • Use parchment paper or silicone mats to prevent sticking during baking.
  • The fudge frosting can be prepared ahead of time and gently reheated if needed.
  • Adjust baking time slightly depending on your oven to ensure cookies are baked through without drying out.
