This step can also be done in the microwave by heating carefully without boiling.
  3. Layer the ingredients in the crock pot: Add one-third of the sliced potatoes to the bottom of the crock pot. Pour one-half cup of the prepared sauce over the potatoes, then sprinkle one-third of the shredded cheddar cheese and shredded Parmesan cheese evenly on top.
  4. Repeat layers: Repeat the layering process two more times—potatoes, sauce, then cheeses—so all ingredients are used up.
  5. Cook: Cover the crock pot and cook on high for 3 to 4 hours, or on low for 5 to 6 hours, until the potatoes are tender and fork easily passes through.
  6. Optional garnish and serve: Once cooked, sprinkle 1 teaspoon dried parsley over the top if desired, then serve immediately while hot and cheesy.
