- 1 ounce dried onion soup mix
- 32 ounces chicken broth (or beef broth as an alternative)
Instructions
- Prepare the meat: Add the ground beef to the Crock Pot and spread it out evenly to start the base of the soup.
- Add potatoes: Peel and cube the Russet potatoes, then add them to the Crock Pot over the beef.
- Season: Sprinkle the dried onion soup mix over the potatoes to enhance the flavor.
- Layer cheese soup: Spread the condensed cream of cheese soup evenly over the potatoes for a creamy texture.
- Add cream cheese and broth: Place the blocks of cream cheese on top, then pour the chicken broth over everything ensuring the potatoes are submerged in liquid.
- Cook low and slow: Cover with the lid and cook on low temperature for 8 hours, allowing all ingredients to meld and the potatoes to soften.
- Finish and serve: After 8 hours, stir the soup thoroughly until the cream cheese has fully melted. Add the shredded cheddar cheese, stir to combine, then serve hot.

- You can use frozen ground beef for convenience, but be sure to break it up halfway through cooking for even texture.
