- 4 medium white potatoes
Seasoning & Oil
- 2 tbsp olive oil
- 1 tsp smoked paprika
- 1 tsp cumin powder
- 1 tsp garlic salt
- 1 tsp onion powder
- 1 tsp chili powder or cayenne pepper
- 1 tsp salt
- 1 tsp pepper
Garnish
- 1 handful cilantro
- Juice of 1 lime
Instructions
- Prepare Potatoes: Peel and chop the potatoes into small cubes. Place them in a saucepan and cover with cold water, just enough to submerge them. Bring to a boil.
- Parboil: Cook the potatoes for 10-15 minutes until they are fork tender but not falling apart. Drain thoroughly and return to the hot pan. Cover and shake to rough up the edges, creating a textured surface for roasting.
- Preheat Oven: While the potatoes are boiling, pour the olive oil into a baking tray. Place the tray in the oven and heat it at 400°F (200°C) for 5 minutes to warm the oil.
- Season Potatoes: Carefully transfer the roughed-up potatoes into the hot baking tray. Add the smoked paprika, cumin, garlic salt, onion powder, chili powder, salt, and pepper. Gently toss or stir to coat all the pieces evenly.
- Roast: Roast the potatoes in the oven for 30-40 minutes, turning once or twice, until crispy and golden brown.
- Serve: Remove from the oven, toss with freshly chopped cilantro and a squeeze of lime juice. Serve immediately for optimal crispiness.
