Description

  • 4 medium white potatoes

Seasoning & Oil

  • 2 tbsp olive oil
  • 1 tsp smoked paprika
  • 1 tsp cumin powder
  • 1 tsp garlic salt
  • 1 tsp onion powder
  • 1 tsp chili powder or cayenne pepper
  • 1 tsp salt
  • 1 tsp pepper

Garnish

  • 1 handful cilantro
  • Juice of 1 lime

Instructions

  1. Prepare Potatoes: Peel and chop the potatoes into small cubes. Place them in a saucepan and cover with cold water, just enough to submerge them. Bring to a boil.
  2. Parboil: Cook the potatoes for 10-15 minutes until they are fork tender but not falling apart. Drain thoroughly and return to the hot pan. Cover and shake to rough up the edges, creating a textured surface for roasting.
  3. Preheat Oven: While the potatoes are boiling, pour the olive oil into a baking tray. Place the tray in the oven and heat it at 400°F (200°C) for 5 minutes to warm the oil.
  4. Season Potatoes: Carefully transfer the roughed-up potatoes into the hot baking tray. Add the smoked paprika, cumin, garlic salt, onion powder, chili powder, salt, and pepper. Gently toss or stir to coat all the pieces evenly.
  5. Roast: Roast the potatoes in the oven for 30-40 minutes, turning once or twice, until crispy and golden brown.
  6. Serve: Remove from the oven, toss with freshly chopped cilantro and a squeeze of lime juice. Serve immediately for optimal crispiness.
