Corn Fritters
- 1 cup All-purpose flour
- 1 tsp Onion powder or 1 small fresh onion, finely chopped
- 1 tsp Garlic powder or 2 small fresh garlic cloves, minced
- 1/2 tsp Salt
- 1/2 tsp Black pepper powder
- 2 tbsp Parsley, chopped
- 1 large Egg
- 1/4 cup Water
- 15 oz Corn kernels, fresh, canned, or thawed from frozen
- 1/4 cup Parmesan, grated
- 1/4 cup Shredded white cheese, such as mozzarella or cheddar
- 2–4 tbsp Cooking oil for shallow frying
Yogurt Sauce (optional)
- 1/2 cup Greek yogurt
- 1 tsp Mustard
- 1 tsp Honey
- 1/4 tsp Salt
- 1/4 tsp Pepper
- 2 tbsp Parsley, chopped (optional)
Instructions
- Make the batter: In a large bowl, whisk together the flour, garlic powder, onion powder, parsley, salt, and pepper. Add the egg and water, and stir until combined.
- Add the corn and cheese: Fold in the drained corn, Parmesan, and shredded white cheese until evenly mixed.
- Heat the pan: Heat a non-stick frying pan over medium heat and lightly grease with oil or butter.
- Scoop the batter: Using a scoop or large spoon, drop mounds of the batter onto the hot pan, leaving some space between each fritter.
- Pan-fry the fritters: Fry for about 3-4 minutes on each side, or until golden brown and crispy. Press down slightly with a spatula to flatten as they cook.
- Drain and serve: Remove the fritters from the pan and drain on paper towels. Serve hot with your favorite dipping sauce or enjoy as a snack or side dish.
- Yogurt sauce: Combine all sauce ingredients. Taste and adjust seasoning. Serve with the fritters.
