  • 1 cup All-purpose flour
  • 1 tsp Onion powder or 1 small fresh onion, finely chopped
  • 1 tsp Garlic powder or 2 small fresh garlic cloves, minced
  • 1/2 tsp Salt
  • 1/2 tsp Black pepper powder
  • 2 tbsp Parsley, chopped
  • 1 large Egg
  • 1/4 cup Water
  • 15 oz Corn kernels, fresh, canned, or thawed from frozen
  • 1/4 cup Parmesan, grated
  • 1/4 cup Shredded white cheese, such as mozzarella or cheddar
  • 24 tbsp Cooking oil for shallow frying

Yogurt Sauce (optional)

  • 1/2 cup Greek yogurt
  • 1 tsp Mustard
  • 1 tsp Honey
  • 1/4 tsp Salt
  • 1/4 tsp Pepper
  • 2 tbsp Parsley, chopped (optional)

Instructions

  1. Make the batter: In a large bowl, whisk together the flour, garlic powder, onion powder, parsley, salt, and pepper. Add the egg and water, and stir until combined.
  2. Add the corn and cheese: Fold in the drained corn, Parmesan, and shredded white cheese until evenly mixed.
  3. Heat the pan: Heat a non-stick frying pan over medium heat and lightly grease with oil or butter.
  4. Scoop the batter: Using a scoop or large spoon, drop mounds of the batter onto the hot pan, leaving some space between each fritter.
  5. Pan-fry the fritters: Fry for about 3-4 minutes on each side, or until golden brown and crispy. Press down slightly with a spatula to flatten as they cook.
  6. Drain and serve: Remove the fritters from the pan and drain on paper towels. Serve hot with your favorite dipping sauce or enjoy as a snack or side dish.
