Ingredients

Units Scale

Hamburger Steaks

  • 1.8 pounds ground beef
  • 4 tbsp breadcrumbs
  • 1 tsp salt
  • 1 tsp coarsely ground black pepper
  • 1 egg
  • 1 shallot, grated

Whiskey Cream Sauce

  • 1 tbsp olive oil
  • 1 tbsp unsalted butter
  • 2 shallots, diced
  • 2 garlic cloves, minced
  • 1 tbsp yellow mustard
  • 1/2 tsp salt
  • 1 tsp coarsely ground black pepper
  • 1 tbsp all-purpose flour
  • 1/2 cup whiskey
  • 1/2 cup beef broth
  • 1 cup cream (20% fat or heavy cream)
  • 2 tbsp chopped chives

Instructions

  1. Prepare the Meat Mixture: In a large bowl, combine the ground beef with the egg, breadcrumbs, salt, pepper, and grated shallot. Use your hands to mix until just combined to maintain a tender texture.
  2. Shape the Steaks: Divide the mixture into 4 equal portions and shape each into a ball. Set aside to prepare the sauce.
  3. Prep Aromatics: Dice the shallots, mince the garlic cloves, and chop the chives for the sauce finishing touch.
  4. Sear the Steaks: Heat olive oil and butter in a heavy skillet or iron skillet over medium-high heat. Add the beef balls, pressing down each with a spatula or burger press to about ¾ inch (2 cm) thickness. Sear for 5 minutes on each side until nicely browned. Remove steaks and place on a clean plate.
  5. Cook Aromatics: Reduce the heat to medium, add the diced shallots and minced garlic to the skillet. Cook for 1 minute until fragrant.
  6. Create Sauce Base: Stir in the yellow mustard, salt, pepper, and flour, combining well to form a roux-like base.
  7. Deglaze with Whiskey: Pour in the whiskey and simmer for 3 minutes, stirring and scraping up the brown bits from the skillet to add flavor.
  8. Add Broth and Cream: Stir in the beef broth and bring to a boil. Then add the cream and mix thoroughly until smooth.
  9. Simmer Steaks in Sauce: Return the hamburger steaks to the skillet, spoon sauce over them, and simmer gently for 5 minutes until cooked through and sauce thickens slightly.
  10. Garnish and Serve: Finish by sprinkling chopped chives and freshly ground black pepper over the steaks. Serve immediately and enjoy your hearty meal!

Notes

  • For best results, use a heavy-bottomed or cast iron skillet to achieve a good sear on the steaks.
  • If whiskey is not desired, substitute with additional beef broth and a splash of apple cider vinegar for acidity.
  • Breadcrumbs help retain moisture and shape, so do not skip them.
  • Make sure not to overmix the meat to keep the steaks tender.
  • The sauce thickens as it simmers; adjust consistency by adding more broth if needed.
