Description

This Creamy Vegetable Casserole is a comforting and satisfying dish that combines a rich cream sauce with a variety of colorful vegetables, all topped with crispy fried onions and melted cheese.

  • 6 tablespoons butter
  • 1/2 cup all-purpose flour
  • 2 1/2 cups heavy cream
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • pinch white pepper
  • 1/4 teaspoon smoked paprika
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon celery salt

For the Casserole:

  • 2 cups frozen cauliflower
  • 2 cups frozen broccoli
  • 4 cups frozen mixed vegetables (carrots, corn, peas, etc.)
  • 1 cup sour cream
  • 2 cups shredded cheddar cheese, divided
  • 2 cups french fried onions
  • parsley for garnish (optional)

Instructions

  1. Preheat oven: Preheat the oven to 350˚F.
  2. Make the Cream Sauce: Melt butter in a saucepan, whisk in flour until golden brown, then slowly add cream while stirring. Cook until thickened, then season with salt, peppers, and spices. Remove from heat, whisk in sour cream and 1 1/2 cups of cheddar cheese.
  3. Assemble the Casserole: Place frozen vegetables in a baking dish, pour the cream sauce over them, and mix well. Top with fried onions and remaining cheese.
  4. Bake: Bake for 50 minutes or until the top is golden brown.
  5. Serve: Garnish with parsley, if desired, and serve hot.
