Description

These Cranberry Brie Bites are a delightful and elegant appetizer perfect for holiday gatherings or any special occasion. Featuring flaky crescent dough filled with creamy brie cheese, tangy cranberry sauce, crunchy pecans, and aromatic rosemary, they combine sweet, savory, and nutty flavors in every bite.

Ingredients

Scale

Dough

  • 1 (8-oz.) tube crescent dough
  • All-purpose flour, for surface
  • Cooking spray

Filling

  • 1 (8-oz.) wheel of brie
  • 1/2 cup whole berry cranberry sauce
  • 1/4 cup chopped roasted unsalted pecans
  • 6 sprigs fresh rosemary, cut into 1 inch pieces

Instructions

  1. Prepare the oven and muffin tin. Preheat your oven to 375°F (190°C). Lightly grease a mini 24-cup muffin tin with cooking spray to prevent sticking and ensure easy removal of the bites.
  2. Prepare the dough cups. On a lightly floured surface, roll out the crescent dough and pinch together any seams to create a single sheet. Cut the dough into 24 equal squares. Carefully place each square into the prepared muffin cups, shaping them to form a cup that will hold the filling.
  3. Add the brie filling. Cut the wheel of brie into small pieces. Place one piece inside each dough cup, making sure to distribute evenly across all 24 cups.
  4. Top with cranberry sauce, pecans, and rosemary. Spoon about a teaspoon of whole berry cranberry sauce over each piece of brie. Then sprinkle chopped roasted unsalted pecans on top, and finish by placing one small piece of fresh rosemary on each bite to add a fragrant touch.
  5. Bake the bites. Place the muffin tin in the preheated oven and bake until the pastry is golden brown and cooked through, about 15 minutes. Remove from the oven and allow to cool slightly before serving.

Notes

  • Use a toothpick to help remove the bites from the muffin tin if they stick.
  • For a sharper flavor, try using aged brie or adding a sprinkle of black pepper before baking.
  • These bites can be made a few hours ahead and warmed just before serving.
  • Substitute pecans with walnuts or almonds if preferred.
  • For a gluten-free version, use gluten-free crescent dough.
