  • ⅓ cup (38g) unsalted butter, melted
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • ½ cup white chocolate chips
  • ⅓ cup dried cranberries

For the Frosting:

  • 1 8-ounce block cream cheese, softened
  • ½ cup (57g) powdered sugar
  • 1 teaspoon vanilla extract
  • ⅓ cup dried cranberries, chopped into smaller pieces
  • 1 ounce white baking chocolate, melted


Instructions

  1. Preheat Oven and Prepare Pan: Preheat your oven to 350ºF (175ºC). Lightly spray a 13×9-inch baking dish with nonstick spray. For thicker bars, you can use a 9×9-inch baking dish instead.
  2. Mix Dry Ingredients: In a medium-sized bowl, whisk together the all-purpose flour, baking soda, salt, and ground cinnamon until evenly combined.
  3. Cream Sugars and Butter: In a separate bowl, cream the granulated sugar, brown sugar, and melted butter together until smooth. Then mix in the eggs and vanilla extract until the batter is well combined.
  4. Combine Wet and Dry Ingredients: Gradually add the dry ingredient mixture to the wet ingredients and mix until a dough forms. Avoid overmixing to keep the bars tender.
  5. Add Mix-ins: Fold white chocolate chips and dried cranberries into the dough evenly.
  6. Spread Batter in Pan: Spread the batter evenly into the prepared baking pan and press down gently with the back of a spatula to level the surface.
  7. Bake: Bake for 15-20 minutes, or until the edges turn golden brown and a toothpick inserted in the center comes out clean. Be careful not to overbake to avoid dryness.
