Cowboy Butter:

  • 1/2 cup (115g) unsalted butter, softened
  • 1 tbsp Dijon mustard
  • 2 cloves garlic, finely minced
  • 1 tbsp chopped parsley
  • 1 tbsp chopped chives
  • 2 tsp fresh thyme leaves
  • 1 tsp sweet paprika
  • 1 tsp salt
  • Pinch of red pepper flakes
  • 1/2 lemon, juice and zest

Pasta:

  • 12 oz (340g) pasta, linguine recommended
  • 2 tsp salt

Chicken:

  • 6 chicken thighs, skinless and boneless
  • 1 tsp salt
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1/2 tsp black pepper
  • 1 tbsp olive oil, or as needed
  • 1 large shallot, finely diced
  • 1 cup (150g) sliced bell peppers, mix of red, yellow and orange
  • 4 cloves garlic, sliced
  • 4 tbsp cowboy butter
  • 1/2 cup (120ml) heavy cream
  • 4 tbsp Parmesan, freshly grated
  • 2 tbsp parsley, finely chopped

Instructions

  1. Make the cowboy butter: Combine all the cowboy butter ingredients in a small bowl and set aside.
  2. This can be made in advance and kept in the fridge until needed. You will only need to use about half of the butter in the pasta recipe.

  3. Prepare the pasta: Bring a large pot of salted water to a boil. Cook the pasta according to package instructions until al dente. Reserve some pasta water before draining.
  4. Prepare the chicken: Cut the chicken thighs into strips or bite-sized pieces. Season with paprika, garlic powder, salt, and pepper.
  5. Cook the chicken: Sear the chicken in a skillet with olive oil until browned. Add shallots, garlic, and bell peppers. Cook until vegetables are softened.
  6. Combine ingredients: Stir in cowboy butter, then add cooked pasta, cream, Parmesan, and parsley. Mix well.
  7. Adjust seasoning: Taste and adjust seasoning as needed. Serve immediately with lemon wedges, extra Parmesan, and garlic bread.

Notes

  • Feel free to add more veggies to the cowboy butter sauce like zucchini, spinach, or cherry tomatoes.
  • The pasta water helps create a silky sauce with a velvety texture without excessive cream. Add to your preference.
  • Ensure chicken reaches 165°F (75°C) internal temperature for doneness.
  • Store leftovers in the fridge for up to 4 days and reheat as needed.
