For the Patty Melt
- 1 1/2 pounds Laura’s Lean Ground Beef
- 1 tsp Table salt, divided
- 1 tsp Ground black pepper, divided
- 1 tbsp Olive oil
- 1/4 tsp Worcestershire sauce
- 3/4-1 stick unsalted butter, divided
- 10 oz Yellow onion, sliced
- 6-8 slices Swiss cheese
- 8 slices Texas toast bread
Instructions
- Prepare the beef patties: In a bowl, combine the ground beef with 1/2 teaspoon salt, 1/4 teaspoon ground black pepper, olive oil, and Worcestershire sauce. Mix well until fully incorporated. Divide the meat into 4 equal portions, about 6 ounces each, and loosely form thick burger patties that will fit your bread slices. Make a deep depression in the center of each patty with your thumb to prevent puffing up. Place patties on a platter, cover, and refrigerate for 15 minutes.
- Caramelize the onions: Heat a skillet, griddle, or frying pan over medium heat. Add a few tablespoons of unsalted butter. Once melted, add the sliced onions and toss to coat in butter. Cook the onions, stirring every 2 to 3 minutes, until soft and golden brown, about 12 to 15 minutes. Remove from heat and set aside.
- Cook the patties: For grilling, preheat your grill, then grill patties about 4 minutes on one side until golden brown, flip, and cook another 4 minutes for medium-rare (adjust cooking time per preference). For stovetop, heat oil in skillet or griddle over high heat until shimmering, then reduce heat to medium and cook patties 3-4 minutes per side for medium-rare. Remove patties from heat and set aside.
- Assemble the sandwiches: Spread a thin layer of butter on one side of each bread slice. On the unbuttered side, place a slice or two of Swiss cheese, then a tablespoon of caramelized onions, followed by a cooked burger patty. Add a little more caramelized onions and top with another slice of cheese. Close the sandwich with another slice of bread, buttered side facing out.
- Toast the sandwiches: Heat a skillet or griddle over medium heat. Place prepared sandwiches in the skillet and toast on both sides until bread is golden brown and crisp, and the cheese has melted, about 3-4 minutes per side. Carefully flip to avoid spilling fillings.
- Serve: Remove the patty melts from the skillet, slice in half, and serve immediately while warm and melty.
