Description

A flavorful and vibrant Cilantro Lime Rice Bowl recipe that combines zesty cilantro lime rice with a variety of fresh and savory toppings, perfect for a quick and delicious meal.

Ingredients

Units Scale

Cilantro Lime Rice

  • 1 Tablespoon avocado oil
  • 1 1/4 cup basmati rice
  • 1 teaspoon minced garlic
  • 2 cups water or broth
  • 1 teaspoon lime zest
  • 1 teaspoon salt
  • 1/3 cup lime juice
  • 1 1/4 cup chopped cilantro leaves

Bowls (Divided)

  • 3/4 cup black beans, cooked or canned, drained
  • 1/2 cup corn, roasted, grilled, or canned, drained
  • 2 cups cooked chicken, shredded or cubed
  • 1/2 cup diced tomatoes
  • 1 medium avocado, cubed
  • 1/2 cup Cilantro Lime Sauce
  • Fresh cilantro for garnish, optional

Instructions

  1. Make Cilantro Lime Rice – In a Dutch oven or medium saucepan, lightly toast the rice in the oil over medium-high heat until it starts to brown. Add in the garlic, water (or broth), lime zest, and salt, then bring to a boil. Lower the heat and add the lid to let simmer for about 7-8 minutes, stirring occasionally to prevent sticking. Add in the lime juice and continue to cook with the lid on for another 2-3 minutes. Remove the lid, remove from heat, and mix in the cilantro. Fluff the rice with a fork.
  2. Combine Bowls – Divide the rice, beans, corn, chicken, tomatoes, and avocado into each bowl. Drizzle each bowl with the cilantro lime sauce. Garnish with fresh cilantro (optional) and enjoy!
