Scale
Ingredients
- 150g dark chocolate
- 4 tbsp cashew butter
- 25g popped quinoa
Instructions
- Melt the Chocolate: Break up the dark chocolate into small pieces and place them in a heat-proof bowl. Microwave on high, stirring every few seconds, until the chocolate is completely melted and smooth, ensuring it doesn’t burn.
- Add Cashew Butter: Stir in the cashew butter to the melted chocolate until fully combined and smooth.
- Fold in Popped Quinoa: Gently fold the popped quinoa into the chocolate and cashew butter mixture, ensuring even distribution without crushing the crunchy quinoa.
- Shape the Bites: Spoon the mixture onto a baking sheet or chopping board lined with parchment paper, spreading and flattening it into small, flat disks.
- Chill to Set: Refrigerate the shaped bites for at least 30 minutes until they are fully set and firm enough to enjoy.
Notes
- Use good quality dark chocolate for the best flavor and smooth texture.
- Make sure not to overheat the chocolate in the microwave to avoid burning.
- Cashew butter adds creaminess and richness, but you can substitute with almond butter if preferred.
- Store the bites in an airtight container in the refrigerator for up to one week.
- These bites make a great on-the-go snack or a healthy dessert alternative.
