Strawberry Overnight Oats:

  • 810 medium ripe strawberries, mashed or blended
  • 1 cup rolled oats
  • 1 Tablespoon almond butter
  • 1 cup vanilla almond milk
  • 2 Tablespoons maple syrup, or to taste
  • 1/4 cup vanilla Greek yogurt

Dark Chocolate Topping:

  • 2 Tablespoons dark chocolate chips
  • 1 teaspoon coconut oil
  • 1 teaspoon crumbled freeze dried strawberries

Instructions

  1. Mash or blend the ripe strawberries.

    Divide the strawberries, oats, almond butter, milk, maple syrup, and yogurt into two containers.

  2. Mix, add lids, and refrigerate for 4-6 hours (or overnight).
  3. In the morning, melt the chocolate and coconut oil together in the microwave for about 30-45 seconds, stirring every 15 seconds.
  4. Pour the melted chocolate over the oats and spread into a very thin layer.
  5. Immediately add the crumbled freeze dried strawberries over the chocolate.
  6. Place in the fridge for another 10 minutes, then enjoy!

Notes

  • Feel free to skip the chocolate magic shell and just mix in chocolate chips, if desired!
  • Mix in crumbled freeze-dried strawberry powder for a more pink color and more strawberry flavor.
  • Adjust the amount of maple syrup to taste.
  • Add any toppings that you want – shredded coconut, flaky sea salt, peanut butter drizzle, or even dried rose petals for a fun twist!
