Strawberry Overnight Oats:
- 8–10 medium ripe strawberries, mashed or blended
- 1 cup rolled oats
- 1 Tablespoon almond butter
- 1 cup vanilla almond milk
- 2 Tablespoons maple syrup, or to taste
- 1/4 cup vanilla Greek yogurt
Dark Chocolate Topping:
- 2 Tablespoons dark chocolate chips
- 1 teaspoon coconut oil
- 1 teaspoon crumbled freeze dried strawberries
Instructions
- Mash or blend the ripe strawberries.
Divide the strawberries, oats, almond butter, milk, maple syrup, and yogurt into two containers.
- Mix, add lids, and refrigerate for 4-6 hours (or overnight).
- In the morning, melt the chocolate and coconut oil together in the microwave for about 30-45 seconds, stirring every 15 seconds.
- Pour the melted chocolate over the oats and spread into a very thin layer.
- Immediately add the crumbled freeze dried strawberries over the chocolate.
- Place in the fridge for another 10 minutes, then enjoy!
Notes
- Feel free to skip the chocolate magic shell and just mix in chocolate chips, if desired!
- Mix in crumbled freeze-dried strawberry powder for a more pink color and more strawberry flavor.
- Adjust the amount of maple syrup to taste.
- Add any toppings that you want – shredded coconut, flaky sea salt, peanut butter drizzle, or even dried rose petals for a fun twist!
