- Prepare the pan: Line a 6-inch round cake pan or a similar small pan with parchment paper to prevent sticking and allow for easy removal of the fudge.
- Heat the condensed milk: In a small saucepan over medium-low heat, warm the sweetened condensed milk, stirring occasionally until small bubbles appear around the edges. Avoid boiling to prevent scorching.
- Melt the chocolate: Place the semi-sweet chocolate chips in a small bowl. Pour the hot condensed milk over the chocolate chips and let it sit for 1 minute to soften the chocolate.
- Combine and rest: Gently stir the mixture until smooth and homogeneous. Let the mixture rest for another 30 seconds to an included melted texture.
- Prepare cherries: Meanwhile, slice the canned cherries in half and toss them with the almond extract in a small bowl for added flavor if using.
- Assemble the fudge: Pour half of the chocolate fudge mixture into the parchment-lined pan. Press three-quarters of the cherries evenly over this layer. Drizzle about 2 tablespoons of sweetened condensed milk on top for extra sweetness.
- Top layer: Pour the remaining fudge over the cherries, smoothing the surface with a spatula. Arrange the remaining cherries decoratively on top.
- Set the fudge: Allow the fudge to set at room temperature for at least 1 hour, or refrigerate for 30 minutes to speed up the process.
