Udon Noodles
- 14 oz. (2 packages of 7 oz.) udon noodles
Garlic and Sauce
- 8 garlic cloves, finely minced
- 2 tablespoons water
- 1 tablespoon sriracha
- 2 tablespoons soy sauce
- 2 tablespoons honey
- 1/4 cup oyster sauce
Cooking and Finishing
- 1/3 cup vegetable oil
- 3 tablespoons freshly squeezed lime juice
- 1/2 cup fresh cilantro, chopped finely
Instructions
- Soak the Noodles: Soak the udon noodles in hot water for 5 to 7 minutes until softened and slightly broken up, then drain and set aside.
- Prepare the Sauce: In a small bowl, whisk together 2 tablespoons water, sriracha, soy sauce, honey, and oyster sauce until well combined. Set aside.
- Cook the Garlic: In a wide sauté pan over medium-low heat, add the vegetable oil and minced garlic. Cook for 2 to 3 minutes, stirring occasionally, until the garlic turns golden brown and fragrant.
- Cook the Noodles: Add the softened udon noodles to the pan with garlic oil, tossing for a few seconds to coat the noodles evenly in the garlic oil.
- Add Sauce and Combine: Pour the prepared sauce over the noodles and toss with tongs to coat. Continue cooking until the sauce has thickened slightly and coats the noodles, leaving a small pool of sauce at the bottom.
- Finish and Serve: Remove from heat, squeeze lime juice over the noodles, and garnish with chopped cilantro. Serve immediately.

- Adjust sriracha amount for desired spice level.
- For added texture, sprinkle with chopped peanuts or sesame seeds.
- Ensure not to overcook the noodles to maintain their chewy texture.
