  • 14 oz. (2 packages of 7 oz.) udon noodles

Garlic and Sauce

  • 8 garlic cloves, finely minced
  • 2 tablespoons water
  • 1 tablespoon sriracha
  • 2 tablespoons soy sauce
  • 2 tablespoons honey
  • 1/4 cup oyster sauce

Cooking and Finishing

  • 1/3 cup vegetable oil
  • 3 tablespoons freshly squeezed lime juice
  • 1/2 cup fresh cilantro, chopped finely

Instructions

  1. Soak the Noodles: Soak the udon noodles in hot water for 5 to 7 minutes until softened and slightly broken up, then drain and set aside.
  2. Prepare the Sauce: In a small bowl, whisk together 2 tablespoons water, sriracha, soy sauce, honey, and oyster sauce until well combined. Set aside.
  3. Cook the Garlic: In a wide sauté pan over medium-low heat, add the vegetable oil and minced garlic. Cook for 2 to 3 minutes, stirring occasionally, until the garlic turns golden brown and fragrant.
  4. Cook the Noodles: Add the softened udon noodles to the pan with garlic oil, tossing for a few seconds to coat the noodles evenly in the garlic oil.
  5. Add Sauce and Combine: Pour the prepared sauce over the noodles and toss with tongs to coat. Continue cooking until the sauce has thickened slightly and coats the noodles, leaving a small pool of sauce at the bottom.
  6. Finish and Serve: Remove from heat, squeeze lime juice over the noodles, and garnish with chopped cilantro. Serve immediately.
