Ingredients

Units Scale

Chicken Mixture

  • 1 rotisserie chicken, shredded (about 1-1.5 pounds)
  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon sea salt
  • 1/2 teaspoon fresh ground pepper
  • 1 teaspoon Worcestershire sauce
  • 1/3 cup sour cream
  • 1 (10 3/4 oz) can condensed Cheddar Cheese soup
  • 1 (10 3/4 oz) can condensed Cream of Chicken or Cream of Mushroom soup

Vegetables

  • 4-5 cups fresh broccoli florets
  • 2 cups fresh green beans, cut into 1-inch pieces

Topping

  • 28 ounce package of frozen tater tots (preferably Ore-Ida Extra Crispy Tater Tots)
  • Crispy shoestring onions (optional)
  • 1 bunch fresh parsley, chopped (optional, for garnish)

Instructions

  1. Preheat and prepare baking dish: Preheat your oven to 350°F (175°C). Lightly spray a 10×7 inch baking dish with non-stick cooking spray and set it aside.
  2. Sauté onion and combine with chicken: In a large skillet over medium heat, heat the olive oil. Add the diced onion and sauté until tender and translucent, about 4-5 minutes. Turn off the heat. Add the shredded rotisserie chicken, garlic powder, sea salt, and fresh ground pepper to the skillet and stir to combine evenly.
  3. Make creamy sauce: In a large mixing bowl, combine Worcestershire sauce, sour cream, the can of condensed Cheddar Cheese soup, and the can of condensed Cream of Chicken or Cream of Mushroom soup. Mix well until smooth.
  4. Combine chicken and vegetables with sauce: Add the cooked chicken mixture along with the fresh broccoli florets and cut green beans into the creamy sauce bowl. Stir everything together thoroughly to coat the chicken and vegetables.
  5. Assemble casserole: Spread the chicken and vegetable mixture evenly into the prepared baking dish.
  6. Add tater tots topping: Arrange the frozen tater tots in an even layer over the top of the chicken mixture.
  7. Bake the casserole: Place the dish in the preheated oven and bake for 50 minutes, or until the tater tots are golden brown and crispy and the casserole is bubbling around the edges.
  8. Cool and garnish: Remove from oven and let the casserole cool for about 10 minutes before serving. Garnish with fresh chopped parsley and crispy shoestring onions if desired.

Notes

  • For extra crunchy tater tots, pre-bake them for 10 minutes before adding to the casserole or broil the casserole for 3-5 minutes after baking. Watch carefully to avoid burning.
  • Crispy shoestring onions add a delicious texture contrast and make a great topping.
  • Ore-Ida Extra Crispy Tater Tots are recommended for best results.
