Description

Potatoes

  • 4 medium/large potatoes, washed and cut into cubes
  • Olive oil, for tossing
  • Salt, to taste
  • Pepper, to taste
  • Garlic powder, to taste
  • Paprika, to taste

Chicken

  • 2 chicken breasts, cut into cubes
  • 1 tbsp dry ranch seasoning
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1 tsp paprika

Bacon and Cheese

  • 6 strips of bacon, chopped
  • 1 cup shredded mozzarella cheese

Finish

  • Ranch dressing, for topping


Instructions

  1. Prepare the Potatoes: Wash and cube the potatoes. Toss them in a bowl with olive oil, salt, pepper, garlic powder, and paprika until evenly coated.
  2. Air Fry Potatoes: Place the seasoned potatoes in the air fryer basket. Cook at 400°F (204°C) for 20-25 minutes, shaking the basket a couple of times to ensure even crisping.
  3. Cook the Bacon: While potatoes cook, chop the bacon strips. Cook them in a skillet over medium-high heat until crispy. Remove bacon from the skillet, leaving 2 tablespoons of bacon grease in the pan.
  4. Cook the Chicken: Add the cubed chicken to the hot skillet with bacon grease. Season with salt, pepper, paprika, and ranch seasoning. Cook, stirring occasionally, until the chicken is fully cooked and no longer pink inside. Remove from heat.
  5. Combine and Assemble: When potatoes are done, add them to the skillet with the chicken. Stir to combine everything evenly. Sprinkle the shredded mozzarella cheese on top, then add the cooked bacon.
  6. Melt the Cheese: Place the skillet under the oven broiler for a couple of minutes until the cheese melts and bubbles. Alternatively, cover the skillet with a lid and let it sit on the stove until the cheese melts.
  7. Serve: Plate the skillet mixture and drizzle with ranch dressing. Enjoy warm!

  • For extra crispiness, make sure to shake the air fryer basket at least twice during cooking.
  • You can substitute shredded cheddar or a cheese blend if mozzarella is unavailable.
  • If you don’t have an air fryer, you can roast the potatoes in the oven at 425°F (218°C) for about 30-35 minutes, flipping halfway through.
