For the Clafoutis:

  • 1 Tbsp unsalted butter, to grease the pan
  • 3 cups sweet cherries, (1 lb before pitting), stemmed and pitted
  • 1 cup whole milk
  • 1/2 cup granulated sugar
  • 3 large eggs
  • 1 Tbsp rum, kirsch or Cognac, optional, or add an extra 1 tsp vanilla
  • 2 tsp vanilla extract
  • 1/2 cup all-purpose flour, spooned and leveled
  • 1/8 tsp fine sea salt
  • Confectioners sugar for dusting

For the Whipped Cream:

  • 1 cup heavy whipping cream
  • 2 Tbsp Powdered sugar
  • 1/2 tsp vanilla extract

Instructions

  1. Preheat the Oven: Preheat the oven to 350°F with a rack in the center. Grease a 9-inch pie pan with butter.
  2. Pit Cherries: Remove stems and pits from cherries. Place them in the prepared pan.
  3. Prepare Batter: In a blender, combine milk, sugar, eggs, rum, vanilla, flour, and salt. Blend for 1 minute.
  4. Pour Batter: Pour the batter over cherries in the pan.
  5. Bake: Bake for 50-55 minutes until puffed and browned. Cool for 20 minutes.
  6. Make Whipped Cream: In a bowl, beat cream, sugar, and vanilla until medium-stiff peaks form.
  7. Serve: Dust clafoutis with sugar, serve with whipped cream.
