Zucchini Casserole:

  • 2 1/23 cups zucchini, grated (about 4 medium zucchinis)
  • 1 teaspoon olive oil
  • 1 medium shallot, finely chopped
  • 3 cloves garlic, minced
  • 2 eggs
  • 1/2 teaspoon salt, more or less to taste
  • 1/2 teaspoon paprika
  • 1/4 teaspoon black pepper, more or less to taste
  • 1/8 teaspoon nutmeg, more or less to taste
  • 1 cup sharp cheddar, grated
  • 2 tablespoons parmesan, freshly grated

Optional:

  • Fresh chopped parsley for garnish

Instructions

  1. Preheat oven: Preheat the oven to 355°F.
  2. Prepare zucchini: Grate the zucchinis using a cheese grater. Optionally, peel the zucchini before grating.
  3. Remove excess liquid: Place the grated zucchini in a cheese cloth or paper towels, sprinkle with a pinch of salt, and let sit for 5 minutes. Squeeze out as much liquid as possible.
  4. Saute shallots and garlic: In a skillet, heat olive oil over medium-high heat. Add shallots and cook for 2-3 minutes. Add garlic and cook until fragrant.
  5. Cook zucchini: Add the zucchini to the skillet and cook for 1-2 minutes. Transfer the mixture to a baking dish.
  6. Prepare egg mixture: In a small bowl, beat eggs with paprika, salt, pepper, and nutmeg.
  7. Combine ingredients: Add the egg mixture and half of the cheddar cheese to the zucchini. Mix well and top with the remaining cheddar and parmesan.
  8. Bake: Bake for 27-30 minutes until the cheese is golden. Optionally, broil for 1-2 minutes for a crispier top.
