Description

This Cheesy Loaded Meatloaf Casserole combines the classic flavors of meatloaf with the creamy goodness of mashed potatoes and a generous topping of cheddar cheese and bacon. A comforting and satisfying dish perfect for a cozy family dinner.


Ingredients

Mashed Potatoes:

  • 3 cups mashed potatoes

Meatloaf Mixture:

  • 1 tablespoon Worcestershire sauce
  • 1/2 cup finely chopped white onion
  • 1 large egg
  • 1/3 cup crumbled cooked bacon or “Bacon Bits”
  • 3 minced garlic cloves
  • 1 pound lean ground beef
  • 2 tablespoons brown sugar
  • 1 cup Italian breadcrumbs
  • 1 1/2 cups shredded sharp cheddar cheese
  • Salt and black pepper to taste

Instructions

  1. Preheat the oven to 400ºF.
  2. Mix the beef with the garlic, onion and Worcester sauce with your hands or a couple of forks.

  3. Add salt and black pepper then mix in the egg and breadcrumbs.
  4. Press the mixture into an 8-inch square baking pan.
  5. Spread the mashed potatoes on top.
  6. Sprinkle the cheese and bacon on top of that.
  7. Cover with foil and bake for 30 minutes.
  8. Discard the foil and bake for 10 more minutes or until the cheese melts and bubbles.
  9. Serve hot.
