- 1 cup spinach, chopped roughly
- 1/2 cup ricotta cheese
- 1/2 cup feta cheese
Pastry
- 2 sheets puff pastry (10×10 inches each)
- 1 egg (for egg wash)
Instructions
- Prepare the filling: In a large bowl, combine the chopped cooked chicken, chopped spinach, ricotta cheese, and feta cheese thoroughly until evenly mixed.
- Cut the puff pastry: Unroll one sheet of puff pastry and cut it into 4 equal squares, each approximately 5×5 inches.
- Assemble the hand pies: Spoon the chicken and cheese filling onto the center of each puff pastry square. Fold each square diagonally to form a triangle, then seal the edges firmly by pressing with your fingers or a fork to prevent filling from leaking out.
- Apply egg wash: Beat the egg and brush the tops of each hand pie with the egg wash to achieve a golden brown finish after cooking.
- Cook the hand pies: You can either bake them in a preheated oven at 375°F (190°C) for 15 minutes or air fry at 350°F (175°C) for about 12-15 minutes until the pastry is puffed and golden brown.
- Cool and serve: Allow the hand pies to cool slightly before serving. These can also be frozen before cooking for a convenient future meal.
