Ground Beef Mixture:
- 1 1/2 pounds ground beef
- 1 red bell pepper, diced
- 1/2 yellow onion, diced
- 1 (1.25 oz.) packet taco seasoning
- kosher salt and freshly ground pepper, to taste
Sour Cream Mixture:
- 1/2 cup sour cream
- 1/2 cup mayonnaise
- 1 cup sharp cheddar cheese, shredded
- 1 (4 oz.) can diced green chiles
- 1 teaspoon garlic powder
Biscuit Base:
- 2 1/2 cups biscuit mix
- 1 cup water
- 1 3/4 cups sharp cheddar cheese, shredded, divided
Topping:
- 1 (10 oz.) can fire-roasted diced tomatoes with green chiles
Instructions
- Preheat and Prepare: Preheat oven to 350º F. Grease a 9×13-inch baking pan.
- Cook Ground Beef: Brown ground beef, onion, and bell pepper in a skillet. Drain excess grease.
- Season: Stir in taco seasoning, salt, and pepper.
- Prepare Sour Cream Mixture: Combine sour cream, mayonnaise, 1 cup cheddar cheese, green chiles, and garlic powder.
- Make Biscuit Base: Mix biscuit mix with water to form dough. Press into baking dish and bake until lightly golden.
- Layer and Bake: Spread beef mixture over biscuit base. Add diced tomatoes, top with sour cream mixture and remaining cheddar cheese. Bake until heated through.
- Serve: Remove from oven, serve, and enjoy!
