Description

Cattle Drive Casserole is a hearty and flavorful dish that combines seasoned ground beef, chiles, and a cheesy topping over a biscuit base. Perfect for a comforting family dinner!

Ground Beef Mixture:

  • 1 1/2 pounds ground beef
  • 1 red bell pepper, diced
  • 1/2 yellow onion, diced
  • 1 (1.25 oz.) packet taco seasoning
  • kosher salt and freshly ground pepper, to taste

Sour Cream Mixture:

  • 1/2 cup sour cream
  • 1/2 cup mayonnaise
  • 1 cup sharp cheddar cheese, shredded
  • 1 (4 oz.) can diced green chiles
  • 1 teaspoon garlic powder

Biscuit Base:

  • 2 1/2 cups biscuit mix
  • 1 cup water
  • 1 3/4 cups sharp cheddar cheese, shredded, divided

Topping:

  • 1 (10 oz.) can fire-roasted diced tomatoes with green chiles

Instructions

  1. Preheat and Prepare: Preheat oven to 350º F. Grease a 9×13-inch baking pan.
  2. Cook Ground Beef: Brown ground beef, onion, and bell pepper in a skillet. Drain excess grease.
  3. Season: Stir in taco seasoning, salt, and pepper.
  4. Prepare Sour Cream Mixture: Combine sour cream, mayonnaise, 1 cup cheddar cheese, green chiles, and garlic powder.
  5. Make Biscuit Base: Mix biscuit mix with water to form dough. Press into baking dish and bake until lightly golden.
  6. Layer and Bake: Spread beef mixture over biscuit base. Add diced tomatoes, top with sour cream mixture and remaining cheddar cheese. Bake until heated through.
  7. Serve: Remove from oven, serve, and enjoy!
