Fudge Base

Instructions

  1. Toast Pecans: In a skillet, toast 2 cups of pecans with 2 tablespoons of butter over medium heat for about 5 minutes until fragrant and lightly browned. Remove from heat and set aside.
  2. Melt Butter: In a large saucepan, melt 2 sticks (1 cup) of butter on medium-high heat until fully liquified.
  3. Add Sugars: Add granulated sugar and brown sugar to the melted butter, stirring well to combine evenly.
  4. Add Cream, Salt, and Vanilla: Pour in the heavy whipping cream, sprinkle the salt, and add the vanilla extract. Stir the mixture thoroughly to combine.
  5. Boil Mixture: Keep the heat on medium-high or increase to high to bring the mixture to a rolling boil, stirring occasionally. If boiling does not occur at medium-high, increase heat to high. Once boiling starts, begin timing for 4 minutes, stirring occasionally.
  6. Remove from Heat & Add Powdered Sugar: After 4 minutes of boiling, remove the pan from heat. Immediately add the powdered sugar and mix thoroughly until smooth.
  7. Add Toasted Pecans: Fold in the 2 cups of toasted and chopped pecans into the fudge mixture until well distributed.
  8. Set Fudge: Pour the fudge mixture into a prepared baking pan. Sprinkle the remaining 2 tablespoons of chopped pecans evenly on top. Let the fudge set at room temperature for at least 3 hours until firm.
  9. Slice and Serve: Once firm, cut the fudge into small squares and serve.
