Puff Pastry:

Scrambled Eggs:
- 6 oz. bacon, diced
- 8 eggs, beaten
- 2 cups shredded sharp cheddar cheese
- 4 tablespoons unsalted butter, softened
- 3 garlic cloves, pasted
- 2 teaspoons sriracha or ketchup
- Kosher salt and freshly cracked black pepper, to taste

Instructions
- Preheat the oven: Preheat the oven to 400°F and line a sheet tray with parchment paper.
- Thaw the pastry: Thaw the frozen puff pastry on the countertop for 10 minutes.
- Prepare butter: Mix softened butter and garlic in a bowl.
- Cook bacon: Cook diced bacon until crispy, then chop into small pieces.
- Scramble eggs: Cook beaten eggs with 1/2 cup cheese until barely set, then let cool.
- Assemble: Cut pastry into pieces, add eggs, bacon, sriracha, and cheese. Roll, cut, and place on the sheet tray.
