Description

A hearty and flavorful Bolognese sauce recipe that combines ground beef, Italian sausage, and pancetta in a rich tomato-based sauce, perfect for serving over pasta.


Ingredients

Vegetable Mixture:

  • 1 tablespoon olive oil
  • 1/2 onion, very finely diced
  • 2 carrots, very finely diced
  • 2 celery stalks, very finely diced
  • 1 1/2 tablespoon minced garlic

Meat Mixture:

  • 4 ounces pancetta or bacon, finely diced
  • 1 pound ground beef
  • 1 pound mild Italian sausage

Seasonings and Liquids:

  • 1 teaspoon salt
  • 1/2 teaspoon cracked black pepper
  • 1/8 teaspoon fresh grated nutmeg
  • 1 cup dry white wine
  • 1 cup beef broth
  • 28 ounce can San Marzano crushed tomatoes
  • 2 tablespoons tomato paste
  • 1 sprig fresh thyme
  • 1 bay leaf
  • 1 cup whole milk

To Serve:

  • 1 pound pasta, cooked

Instructions

  1. Prepare Vegetable Mixture: Heat olive oil in a large saucepan, sauté onion, carrots, celery, and garlic for 5 minutes over medium-low heat. Remove from pan.
  2. Cook Meat Mixture: In the same pan, cook beef, sausage, and pancetta until browned. Season with salt, pepper, and nutmeg. Stir in cooked vegetables.
  3. Add Liquids and Simmer: Pour in white wine, beef broth, crushed tomatoes, and tomato paste. Add thyme and bay leaf. Simmer over low heat for 1-2 hours.
  4. Finish Sauce: 15 minutes before serving, stir in milk and simmer gently until ready.
  5. Serve: Toss cooked pasta in the Bolognese sauce and enjoy!

Notes

  • For a finer texture, finely dice all vegetables and meat.
