A hearty and flavorful Bolognese sauce recipe that combines ground beef, Italian sausage, and pancetta in a rich tomato-based sauce, perfect for serving over pasta.

Vegetable Mixture:
- 1 tablespoon olive oil
- 1/2 onion, very finely diced
- 2 carrots, very finely diced
- 2 celery stalks, very finely diced
- 1 1/2 tablespoon minced garlic
Meat Mixture:
- 4 ounces pancetta or bacon, finely diced
- 1 pound ground beef
- 1 pound mild Italian sausage
Seasonings and Liquids:
- 1 teaspoon salt
- 1/2 teaspoon cracked black pepper
- 1/8 teaspoon fresh grated nutmeg
- 1 cup dry white wine
- 1 cup beef broth
- 28 ounce can San Marzano crushed tomatoes
- 2 tablespoons tomato paste
- 1 sprig fresh thyme
- 1 bay leaf
- 1 cup whole milk
To Serve:
- 1 pound pasta, cooked
Instructions
- Prepare Vegetable Mixture: Heat olive oil in a large saucepan, sauté onion, carrots, celery, and garlic for 5 minutes over medium-low heat. Remove from pan.
- Cook Meat Mixture: In the same pan, cook beef, sausage, and pancetta until browned. Season with salt, pepper, and nutmeg. Stir in cooked vegetables.
- Add Liquids and Simmer: Pour in white wine, beef broth, crushed tomatoes, and tomato paste. Add thyme and bay leaf. Simmer over low heat for 1-2 hours.
- Finish Sauce: 15 minutes before serving, stir in milk and simmer gently until ready.
- Serve: Toss cooked pasta in the Bolognese sauce and enjoy!
