For the Chicken Mixture:
- 1 teaspoon Olive oil
- 1/2 cup sliced red onions
- 2 cups cooked chicken breast, shredded into big chunks
- 1/2 cup bbq sauce
For the Quesadillas:
- 2 tortillas (10-12 inch burrito size)
- 2 tablespoons Butter, room temperature
- 2 cups shredded cheddar-jack cheese
Optional for serving:

- guacamole
- salsa
- ranch dip
Instructions
- Cook the Chicken Mixture: Heat a skillet over medium heat, add olive oil and onions. Cook until soft. Add shredded chicken and bbq sauce. Stir to combine and remove from heat.
- Assemble the Quesadillas: Spread butter on one side of each tortilla. Heat another skillet over medium heat, place one tortilla butter side down. Add cheese, chicken mixture, more cheese. Fold in half, cook until golden. Flip and cook the other side until golden. Press down gently. Repeat for remaining quesadillas.
Notes
- This recipe can be easily scaled to feed a larger group.
- Keep finished quesadillas warm in a low-temperature oven.
