For the Kabobs

  • 34 boneless skinless chicken breasts, cut into bite-sized pieces
  • 1 red bell pepper, chopped into 1-inch pieces
  • 1 green bell pepper, chopped into 1-inch pieces
  • 1 cup chopped onion (half white, half red)
  • Wooden skewers (if using), soaked in water for 30 minutes

For the Bang Bang Sauce

  • 2 tablespoons mayonnaise
  • 4 tablespoons Greek yogurt (or sour cream as a substitute)
  • 1 teaspoon Dijon mustard
  • 1/3 cup sweet red chili sauce
  • 1/2 teaspoon sriracha
  • 1 teaspoon honey

Instructions

  1. Prepare the skewers: If using wooden skewers, soak them in water for 30 minutes to prevent burning during grilling.
  2. Toss the chicken in sauce: In a zip-lock bag, combine the chicken pieces and half of the Bang Bang sauce. Toss well to coat, then refrigerate for 15 minutes to marinate.
  3. Preheat the grill: Heat your grill to medium-high heat and brush the grates with oil to prevent sticking.
  4. Skewer the ingredients: Thread the marinated chicken onto skewers, discarding excess marinade. Thread the peppers and onions onto separate skewers for even cooking.
  5. Grill the skewers: Place the chicken skewers on the grill and cook for 4-5 minutes per side until cooked through and slightly charred. Grill the vegetable skewers until tender, about 4-5 minutes per side.
  6. Finish and serve: Remove the skewers from the grill, pour the remaining Bang Bang sauce over the chicken, and serve warm.
