  • 1 cup dates (about 10 Medjool dates, stemmed and pitted)


Instructions

  1. Soften Dates: Remove stems and pits from the Medjool dates if necessary. Place the dates in a small bowl and pour hot water over them. Let them soak for 5 minutes to soften, then drain the water and set the dates aside.
  2. Process Oats: Add the rolled oats to a food processor and pulse or blend for 30 to 60 seconds until the oats resemble coarse sand in texture.
  3. Prepare Apple and Combine Ingredients: Grate the apple using a box grater until you have approximately 1 cup of grated apple. Add the grated apple, softened dates, cinnamon, ginger, and salt to the food processor with the processed oats.
  4. Form Dough: Blend the mixture until it forms a smooth, cohesive ball of dough, about 1 minute. You may need to scrape down the sides of the bowl and pulse again to ensure the dates are fully incorporated.
  5. Shape Energy Bites: Using a tablespoon, scoop portions of the dough and roll them into small balls. This recipe should yield about 15 energy bites.
