Description

Delicious and moist Amish Pineapple Bars topped with a luscious cream cheese frosting, crunchy walnuts, and sweet coconut flakes. This recipe is perfect for a sweet treat or dessert.


Ingredients

Bars:

  • 1/2 cup oil
  • 2 eggs, beaten
  • 2 tablespoons lemon juice
  • 1/2 teaspoon coconut extract
  • 1/2 teaspoon vanilla extract
  • 2 1/2 cups flour
  • 1 3/4 cup sugar
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 20 oz. can crushed pineapple, undrained (three tablespoons set aside for the frosting)

Cream Cheese Frosting:

  • 1/2 cup butter, softened
  • 4 oz. cream cheese, softened
  • 3 tablespoons crushed pineapple
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon coconut extract
  • 3 cups powdered sugar
  • 1 cup walnuts (optional)
  • 1 cup sweetened flaked coconut

Instructions

  1. Preheat oven and prepare pan: Preheat oven to 350°F and grease a sheet pan with edges.
  2. Mix wet ingredients: In a large bowl, combine oil, beaten eggs, lemon juice, coconut extract, and vanilla extract.
  3. Combine dry ingredients: In a separate bowl, mix flour, sugar, salt, and baking soda.
  4. Combine wet and dry ingredients: Mix the dry ingredients into the wet ingredients until just combined. Fold in the undrained crushed pineapple.
  5. Bake the bars: Pour the batter into the prepared sheet pan and bake for 25-30 minutes.
  6. Prepare the cream cheese frosting: Beat together softened butter and cream cheese until smooth. Stir in reserved crushed pineapple, vanilla extract, and coconut extract. Gradually add powdered sugar, beating until smooth.
  7. Toast coconut and walnuts: Toast coconut flakes and walnuts in a skillet over medium heat, being careful not to burn them.
  8. Frost the bars: Once the bars are done, frost them with the cream cheese mixture, and top with toasted coconut and walnuts.

Notes

  • For added crunch, try adding chopped macadamia nuts to the topping.
  • If you prefer a less sweet version, reduce the amount of sugar in the cream cheese frosting.
