Description

Delicious and crispy zucchini fries made effortlessly in the air fryer. These zucchini sticks are coated with a savory mixture of panko crumbs, parmesan, Italian seasoning, garlic powder, and salt, then baked to golden perfection. They’re perfect as a healthy snack or side dish, served warm with marinara or ranch dipping sauces.

Ingredients

Units Scale

Vegetables

  • 3 small zucchini or 2 large zucchini

Breading

  • 1 cup panko crumbs
  • 1/2 cup grated parmesan cheese
  • 2 Tbsp Italian Seasoning
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt

Coating

  • 1/2 cup flour
  • 2 eggs
  • 1 tablespoon water

Equipment and Cooking Spray

  • Olive oil spray

Instructions

  1. Prepare the zucchini: Slice the zucchini into sticks approximately 3-4 inches long and 1/2 inch thick to ensure even cooking and a crispy coating.
  2. Coat with flour: Place the flour in a large resealable bag. Add the zucchini sticks and shake gently to coat evenly with flour, which helps the coating adhere better.
  3. Mix dry ingredients: In a medium bowl, stir together the panko crumbs, parmesan cheese, Italian seasoning, garlic powder, and salt until well combined.
  4. Prepare egg wash: In a small bowl, whisk together eggs and water until fully blended to create a smooth egg wash for dipping.
  5. Coat zucchini: Remove zucchini from the flour bag, then dip each stick into the egg mixture, ensuring full coverage. Next, roll or dip them into the seasoned panko mixture until fully coated.
  6. Air fry: Spray the air fryer basket lightly with olive oil. Arrange the coated zucchini sticks in a single layer inside the basket, not overlapping. Spray the zucchini lightly with more olive oil to enhance crispiness.
  7. Cook: Air fry at 350°F (177°C) for 7-12 minutes, shaking the basket halfway through cooking, until the fries are golden brown and crispy.
  8. Serve: Remove from the air fryer and serve immediately with marinara or ranch dipping sauce.

Notes

  • For extra crispiness, spray the zucchini sticks with a bit more olive oil before cooking.
  • Make sure not to overcrowd the air fryer basket to allow proper air circulation.
  • You can prepare the coating mixture in advance and store it in an airtight container.
  • These zucchini fries are best enjoyed fresh but can be stored in an airtight container for up to 1 day and reheated in the air fryer.
