For the Chicken:

  • 4 boneless, skinless chicken breasts, lightly pounded (about 2 lbs)
  • Creole Cajun Seasoning, to taste
  • 2 tablespoons olive oil

For the Creamy Garlic Herb Sauce:

  • 1 tablespoon unsalted butter
  • 1 shallot, finely diced
  • 10 cloves of garlic
  • 1 cup chicken stock or broth
  • 1 tablespoon fresh-squeezed lemon juice
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon red pepper flakes (optional)
  • 1 tablespoon dijon mustard
  • 1 cup heavy whipping cream
  • 1 tablespoon fresh tarragon, roughly chopped
  • 1 tablespoon fresh parsley, finely chopped
  • 1/3 cup fresh-grated parmesan cheese

Instructions

  1. Season and Sear the Chicken: Pat dry the chicken breasts and season with Creole Cajun seasoning. Sear in a hot skillet until golden. Set aside.
  2. Prepare the Sauce: Saute shallot and garlic, then add stock, lemon juice, spices, and mustard. Simmer until slightly reduced.
  3. Finish the Dish: Stir in cream, herbs, and parmesan. Return chicken to the pan and simmer until cooked through.
  4. Adjust and Serve: Taste and adjust seasoning. Garnish with tarragon and serve hot with your favorite sides.

Notes

  • You can adjust the level of spice by adding more or less red pepper flakes.
